Well, this weekend was a HIGH calorie weekend. It was my sister’s birthday and my child’s birthday. There were cupcakes and cake balls and beer and snacks. So I didn’t expect good news when I stepped on the scale. I gained a pound. That’s not too terrible considering the weekend I had.
After three (or four or five?) weeks of saying that I did absolutely nothing, I can actually say I did something. Granted I’m still not running or breaking a sweat (that’s not saying much since I don’t actually sweat), but I did some yoga.
Cupcakes. Cake pops. Beer. Snacks. Weren’t you listening?
Uhh. I’m having salad for lunch each day this week. That’s pretty good. My lunch and snacks are: a salad (greens, pecans, goat cheese, cucumbers, apples), veggie straws, a plum, two mini Dove dark chocolates or cookies (COME ON).
I made an awesome pizza this weekend that I think you should know about. Stephen made the crust and since it made enough for two pizzas, we had it Sunday night and Monday night. We put some alfredo sauce (not much, really only a couple spoons of it on the entire pizza), grilled chicken, tomatoes, caramelized onions, goat cheese, and a small sprinkling of Italian blend cheese. So good.
Lets talk about this picture. I’ve taken the liberty of circling the issue with a yellow circle in Paint several times. Just so that none of you can say, “What are you talking about, Chelsea?? I don’t see anything!” Great posture and forgiving shirts are really great things on a self esteem. Pictures of yourself sitting in a fitted top? Not so great. Let’s call this “inspiration.” Or “Chelsea’s spare tire.”
