The Cardboard Diet: Week 12

I skipped the past two weeks since I was in Orlando for a week and then talking about Orlando for over a week. But I’m back!!

Weigh In
I don’t remember where I was when I left off, but I’m currently down a total of 4 pounds. It’s time to get serious about this. I lost 4 pounds immediately since I started watching what I was eating, drinking more water, and cooking better. But now I’m stuck. I don’t want to blame blame blame, but I’m busy. Every weekend has been busy for almost 3 months. I’m worn out and I’m sure that is playing a role in my stagnant weight. Once things calm down, it’ll get better.

Exercise Completed
I walked miles and miles around all the parks in Orlando. That counts for something, I’m sure. But aside from that, no, nothing.

Splurge/Guilty Pleasure
Cookies. I love cookies. I had quite a few splurges in Florida, but calories don’t count on vacation.

Success Story
I don’t think I have one. Maybe that I’m still functioning despite my schedules, my child’s random outbursts in the middle of the night, and my workload at work. (I

still love my job, for the record. I don’t mind being busy. It’s better than being bored!)

I made a delicious Mexican style chopped salad last week. I saw one on Pinterest and since I LOVE chopped salads, I thought I’d make my own version of it. Basically you just chop up the following ingredients (or any other Mexican flavor you like) and toss it together in a big bowl. I wait and add my dressing to each individual serving so leftovers are still yummy.

-Grilled chicken (I seasoned mine with lime juice, garlic powder, salt, and pepper)
-Romaine (chopped)
-Cabbage (chopped)
-Halved cherry tomatoes
-Grated carrots
-Peeled, seeded, and chopped cucumber
-Grated cheese (Mexican blend)
-Drained and rinsed black beans
-Drained and rinsed corn

I used a Kroger brand Herb Ranch dressing and it was so good. Just go light on the dressing and you have yourself a delicious, healthy dinner!!
